Yeast in Diamanti Wine Kit

I bought a Diamanti wine kit, and was perusing the instructions. They include some Lalvin EC-1118 yeast and they say to just sprinkle it on the surface of the must. Is this OK, considering the actual yeast packet gives instructions on preparing it in warm water before pitching? Or should I just follow the yeast instructions? TIA!
 
Either way will work. I think kits only have you dry start the yeast to give the must a head start to settle out a bit before the vigorous fermenting starts.
 
It's always best to re hydrate the yeast in 90-100f or whatever the package says.. Give it 10-15 min then add a little must to it to bring it down in 5f increments till it is within 10f or your must. The reason for this is to not shock your yeast.
