Pre-boil: 7.5 gal, 128F, 1.050 (Corr. 1.062 ⇒ 67% efficiency)
Boil
Hot break took about 35 mins in ~5C ambient

68 min: Flame out.
Cool to 75F (about 50 min)
Post-boil: 6 gal, 75F, 1.070 (Corr. 1.072 ⇒ 62% efficiency WTF??)
Fermentation
Day 0: [1.072] Pitch 1 pack Safale S-05 in 6 gal in plastic bucket
Day 13: [1.010] Transfer to plastic carboy, add 1 cinnamon stick suspended in mesh. wort is crazy clear, definitly more yam aroma than v2, but has a very subtle plant-y taste.
Day 28: []
Tasting notes:
The color is beautiful, like a glowing orange. Sweet potato flavor not more enhanced then original recipe. Cinnamon comes back in the aftertaste but does not help flavor at all. Leaves a powdery feeling on the top of your pallet. There is some alcoholic heat at the start but it tempers toward the middle. Overall solid specialty beer, but, I would not go with the cinnamon again.
