So I just realized I threw in 2oz of simcoe instead of 1.5 of saaz. I got much of the hops out that I could with a strainer. I am sure that I got at least 1/2oz - an oz. How confident is anyone that the bitterness will age out? A Year? Its going to probably be at least 45 ibus. maybe more.

No idea how I did that...

without knowing what you threw the hops into we have no idea about the bitterness.

The original post was a panicked anger release post. I was just upset I did such a ridiculous mess up. I am hopping a good year will lower that bitterness and make a balanced beer. og 1.093 fg 1.014.

I've definitely read about how hop bitterness fades with time, but I don't have any of my books handy. Still, I don't think you should panic. With a strong (10.5% ABV?), dark beer, some aging will probably help the flavor settle anyway. The key will be to taste it, of course. But I think you'll be happy with the results in time. Did you taste the wort before fermentation started? And did you taste your 1.014 sample now?

The 1.014 is target, it's still chugging away. Craziest blow off I have yet to experience. Definitely way more so from the wlp530 than the wlp500. Thanks for the comments. Yeah I tasted it pre ferm wort. It was definitely bitter, but then again, almost all wort is. It wasn't shocking, and there wasn't any hop flavor luckily. I guess time will tell, worse case scenario hide them 2 years and I am sure it'll get down to hopefully 30 perceived ibu. I'm hoping a year will do the trick though.
