I've had a lot of luck brewing imperial or double reds by adding carared (12%) and acid malt (2%) to a similar grain bill. I've found that the carared adds nice body, and a beautiful deep red mahogany color to the beer. I also starch convert high, ~154 to given the beer plenty of mouthfeel and maltiness. I think of it more like an english style beer - low IBUs (~30), but high OG 1.087.
