I brewed up the following cream ale recipe a few weeks ago:

4# Pilsner (2 Row) Ger
3# Rahr Two-Row
1# Flaked Corn (Maize)
12oz Cane Sugar
4oz Cara-Pils/Dextrine

1 oz German Tradition hops at various intervals (19 IBUs)

It's been fermenting well at 65 degrees with WL080 Cream Ale blend for 2 weeks. Since this is a blended strain, I was wondering if this yeast would tolerate a few more weeks at 48-50 degrees. Any one try lagering this particular strain before? Or any opinions on whether it would make any difference for this recipe?

Thanks for your insights!

Gerard

I don't know of a beer that doesn't get better with some (or a LOT) of time. The one that stands out was a Barleywine that was not good for 18 months, then it won a best of show at a local event.

I aged my cream ale with this yeast at 33f for two weeks. You will noticed it takes this beer some time to clear with this yeast. I rinsed the yeast and i will try making an American Brown ale with it.
