Hi Guys,
I'm currently mashing part of an all grain recipe that I'm doing right now. I just took my vial of yeast out of the fridge.

It says on the vial.. "please remove vial from refrigerator 3-6 hours before use". I didn't see that until now.. Could I still use it? I will need to use it in about 1.5-2 hours.

Thanks
Pat

Sure. It might take a bit longer to get started, but it will warm up just fine. Put it somewhere warm (70's)

What!!!! You didn't make a starter??? Shame on you!!
Just kidding
Do what HB99 said, works like a champ. just do it slow and youll be fine.
cheers
JJ

The whole point there is not to shock the yeast too much with a temperature differential when pitching. So, if for example, you pitched 33dF yeast into 72dF wort, you might have a problem. But if you pitched 55dF yeast into a 65dF wort, I doubt it would be very detrimental.

If I forget to take it out of the fridge, I put the vial in my pocket for a bit while I'm brewing. This helps it warm up closer to 70*.
