My first cider batch was made with champagne yeast... Aweful.
My second batch was with Safeale 05. Better, but still not what I want.
I'm looking for something that only goes to @ 8-9% alc tolerance and doesn't taste aweful so I can add enough sugar to still have a bit of sweetness to the cider, but if you have a yeast stall out due to the limits of its alc. tolerance, how do you get it to eat your priming sugar and carbonate? (Using bottles, not kegs)
