Wheat Malt, Will it convert with 1 step mash?

Unless everything I've ever done was a lie this should convert just fine. If you are doing a very adjunct heavy mash you may want some other malts like some 6 row.

I am assuming that you are doing a nearly 100% wheat malt grain bill? So long as you arent putting a whole ton of adjuncts (flaked oats/wheat/rye/rice/corn) it should all convert fine. Even if it doesn't wheat malt can convert at the very least itself, if you ahve left over starches the brett/bugs will love it. I've done very heavy white wheat recipes at higher mash temps and it appeared to convert just fine.
 
Wheat malt should be able to convert itself plus about twice its weight in unmalted wheat. It has higher diastatic power than even 6 row I believe.
