I'm planning my spring brews, and I have a Baltic porter and an Italian pilsner on the list. I'd like to get just one yeast that I can use for both. I was thinking 34/70. Anyone have any thoughts on whether that would work for both? Or is there a better option out there?
In terms of mechanics, I would plan to do a starter and overbuild it so I can use it for two batches. I don't usually do a starter with dry yeasts, but I'm starting to make more lagers, so I wouldn't mind having a jar of a lager yeast around.
