I just put a batch together, 4 gallons Welch's white grape and 2 11.5 cans of Welch's concentrate. SG is 1.072. I would rather not add any sugar, even tho most recipes call for it. Want a bit more grape flavor. At this SG I should be good?
Also, did not know about the stirring, have heard I need to stir it during fermentation? Contrary to beer brewing!
 
Stirring will degass the CO2 produced by the yeasts. A buildup up of CO2 turns into carbonic acid which lowers the pH of the mead, potentially too low for the yeast to work. Also, when a wine with lots of CO2 in it can make for a very messy explosion when adding nutrients per SNA.
During the early stages of the ferment, stirring also adds some oxygen to the mix, which the yeast need to reproduce a healthy colony.
Lastly, stirring will help dissipate any lingering amounts of potassium metabisulfite in your juice by letting them off-gas as SO2


As to more flavor, I would add another can of concentrate to backsweeten when it's done.
