Will this do anything to the flavor, or will the extract mellow out and be hidden by the other flavors?
 
Everything does something. But the problem is fermentation completely alters what your adding. Doubtful vanilla will taste anything like vanilla in the end. It might be some great flavor, but it is always a gamble. Adding to the secondary or before bottling is much more predictable
