I was looking to do a smash since I'm snowed in with 18+" right now. What are people doing with toasting 2 row. What temp and how long?

I spread them in a low-sided cookie sheet and bake at 375 until toasted the way I"d like. That takes about 15 minutes, I think, but I didn't time it. I put them in the oven, wait about 10 minutes, then stir them and take them out when they are nice and toasted.

I've heard that when you do this that you should do it in advance and then let it rest in a paper bag for a few days or longer to mellow, but I have never done that as I usually toast in the morning before I crush them. I'm not really great at planning ahead like that!
