Last February I bottled a Black Ale, it had a noticeable off flavor. After carbonating the brew's off flavor was intense and undrinkable. Not sure how to describe the off flavor.. sort of astringent and sort of green apple but not really either. I let the beer sit in storage for several months and tried it again. Still off but not as bad. A month later still there, so I waited until today. Last night while organizing and doing a beer inventory of my store room I set one in the fridge. This morning (yes morning 10AM) I opened it expecting the same off flavor. To my surprise the Black Ale was excellent. A nice roasted and toasted flavor to the citrus flavor of the Amarillo hops. So time does heal the off flavor hurts in a brew.
