Time for another berry melomel

I had real good luck on my blackberry https://www.homebrewtalk.com/showthread.php?t=402508
Then I tried to make a kinda margarita mess using honey and agave and lime and.. well poured it out. Next tried a strawberry melomel. Started out really nice, bottled it and it turned in to acidic rocket fuel that will get you wasted but taste like crap.

So back to what worked before. started off with 4 gallons water, 10 lbs honey. I will pitch the yeast and once it starts up add in 10 lbs mixed berries, no blackberries at cosco`s :( After a bit add 5 more lbs honey. Kill the yeast rack to secondary and add 5 more lbs of berries.

Any suggestions gleefully accepted. :fro:
