It's been a good while since I posted in the forums, so I thought I would share what I've been up to. I brewed a Quad with a friend yesterday. We pulled an extra 4.5 gallon parti-gyle from the grist. I decided to let the wort sour in a bucket overnight with a handful of unmilled 2 Row. It held at 110F for 24 hours with a heat pad. I didn't bother checking pH, but judging from the mild tartness I would guess it was around 4.3, give or take.. I boiled it up today for 15 minutes with a 20 IBU hop addition. Then pitched some Brett C in it.. Now we wait. Nothing better than spontaneous, bonus beer!
