Sugars/Sweeteners that bugs won't chew

Can anyone give me a list of sugars / sweeteners that bugs won't chew through. Will lactose leave a residual sweetness in a beer or will I need to use an artificial sweetener?

All the fake stuff and Stevia are all that I know it won't be able to use. Lactose can be used by brett and some Lacto strains.

I find that a better option is to brew a normal beer and blend it with the sour beer.

You can do this but unless you kill all the bugs in the sour beer they will eat whatever sugar is in the normal beer

Even the fake stuff can be tricky, it often contains a non-trivial amount of maltodextrin as filler. If you want to go artificial, go with the water-based stuff.

The easiest (best?) option is to sweeten in the glass by blending with another beer, fruit juice, or a simple syrup. No worries about carbonation/fermentation issues, and you can do it to taste depending on the drinker.
