My last two wine kits (winexpert) have had a strange spongy stuff floating on the top at the end of the stabilising step. I assume it is the sediment from the wine but I would think sediment should fall to the bottom. I think everything is ok, it smells ok, I was just wondering what the stuff might be and why it floats. This has happened with the last two out of 25 kits.

You probably just had a higher concentration of dissolved CO2 in the batch and it was still degassing. That pushes many sediments to the top. That's my guess.

Thanks. Didn't think there would be too much of an issue but it happened with the last two kits in a row and I have never seen it before. Needed reassurance even after this long at it.

Thanks again
