I am brewing a chocolate stout today and was wondering if I can take the runnings to make a starter for the WYeast 3711 PC French Saison yeast I picked up for azscoob's cottage house saison.

I would chill and decant the starter - I could even wash it I suppose.

Can I use the runnings or am I better using light DME (which is what I usually do).

Thanks!

Technically you could use the runnings but I would just use the DME if you have it. I'd be too worried about getting the chocolatey taste in my saision. If you were brewing something light like a pale ale, kolsh, tripel, etc... I would use the runnings.
