Stone XI/SSR 5gal Extract Recipe

So I searched and searched and I could not find a 5gal extract recipe for this. I'm still a beginner (this will be my 4th brew) I did some research of all the various threads on this beer (read all of Stone XI Anniversary Clone)and decided to plug some numbers and come up with a recipe. Can you guys tell me what you think?

What do you guys think of this? Any suggestions?

-Yeast choice correct?
-Should I use Pale or Dark LME instead?
-How long should I dry hop? I was thinking after 2 weeks throwing them in for the remaining 2 weeks.

I just racked this off the hops and into the keg, and carbed it up last night.

Gave it a sample this morning and it's fantastic. The recipe I used is below (from the larger clone thread).

Looks good on the recipe.
Yeast is fine, but you might wanna pitch 2-3 packs or make a starter. I used 1056 wyeast (anything neutral/clean).

Use pale LME. Carafa is there for your color.

I dry hopped for 5 days. On about 3.5 days in, I put it in my keezer to cold crash. Then racked after 5 days total. I could've gone longer, but didn't wanna gamble, given my previous failure with this clone. 2 weeks might be pushing it. I'd aim for 1 week, 1.5 tops.


Also, I'd strongly urge you to cold crash this, and to be careful with oxidation. With this many hops, there's def some room for error. I ruined my last attempt at this, as I got too much hop dust in the bottles and it gave it a sour grassy hop flavor. Kegging it turned out much better.

Thanks for replying. So I'll use Pale LME then. So you think 2 weeks for primary and then 1 week dry hop would be good? Or 3 week primary 1 week dry hop? I'll cold crash it for sure. Just bought a chest freezer and I'm in the process of making it into a keezer. This will be my first kegging experience.

2.5-3wk primary. It's a decently big beer. Mine took a full 2 wks to stop bubbling.

Good luck. Just a heads up, you're gonna lose a lot of beer to trub and hop dust. My 5.25 gal batch ended up at just over 4 gals (yikes). Also, good luck with the keezer. I just converted a 7cu ft GE freezer to a keezer, and the black IPA is my 3rd brew on it. It's so great to pull that handle after a long day at work.
