We got ahold of some Staymans and Smokehouse apples in October and just racked them, its a deep golden perfectly clear cider with the most body we have had in one of our own ciders so far,its got as much body as a very good wine, maybe even more. It begged for an oak stave for a couple of weeks, although it fermented dry it doesnt seem like its going to need any backsweetening, just age on some oak and stick it in a bottle! WVMJ
 
Smokehouse are some of the best old-fashioned cider apples you can buy. It's a shame they don't get more recognition. A friend of mine made 50 gallons of Orleans/Smokehouse cider one year and it was amazing.
