I was wondering if anybody knows how long a mixed batch of Star San will stay good. I mixed up a 5Gal batch this last weekend for my brew day and currently have the remainder, about 3.5 gallons in a 5 gallon bucket with a lid sealed on it. I was wondering if it is safe to keep in a food grade bucket, and if so for how long? :drunk:

As far as I know, it's totally safe to keep in the bucket. I'm not entirely sure how long it'll last, but I've been told it should last a few months for sure. If you're concerned, check it with a pH testing strip periodically. As long as it's below 3, it's viable. Also, if it gets cloudy, then it's no good either.

If it tests below 3 and is cloudy it is fine right? Cloudy doesn't neccessarily mean bad from what I've learned. But I could be wrong, :).

Cloudy does not mean it has gone bad. If you have hard water it goes cloudy within minutes I've found.

I mix up 5G in a distilled water jug and it keeps fine so long as it is closed.

As long as the PH is right my understanding is it is still good. If you don't have the ability to test PH though and it goes cloudy it is safer to dump it.

As for how long it can store. I make mine in 5 gal batches and store it in a keg. It has stored for over a year without problems.
