Fermenting a batch of saison with what was going to be Spruce tips but they weren't out yet so ended up being spruce buds and ends of needles. Also primrose flowers. French saison yeast pilsner and spelt.
Anyway I've since been sampling various conifer leaves for dry hopping purposes and apart from the amazing smelling yew which I'm pretty sure is poisonous I really like the Cypress leaf flavour. I think it's a leyland, but I know they are a skin irritant. Anyone know of using it in a beer or food flavour?
