So after reading many threads and peoples opinions I have decided to keep my first beer (summer ale extract kit) in the primary for the duration. What I am curious about is if I wanted to could I put a portion of that beer into another bucket and add lemon zest to it? Would it work or would there be too much head space causing it to oxidize? I do have a carboy if that would be better. Any help and advice would be appreciated.

Oxidation is an old buggaboo. It doesn't happen, except over very long periods of time. Just go ahead and split the batch.
