Update - moving this off of yeast today to sit until kegged in September. Gravity sample was 1.022 so about 12% abv. At this point the roasted malts really dominate but there is definitely some complexity and layers coming through. A little hot but it should mellow over time. Will post back in September.Planning to brew an imperial stout Saturday based on this monster. Should be a fun and challenging brew day!

Finishing up the two step starter of two packets S189 to give @dmtaylor 's suggestion a try "take any Pils recipe with S189 at 66-68".
Two packs, best by date Dec 2020, purchased maybe mid 2018, taking no chances, chewing no bubblegum, trying @Bilsch ’s advice to pitch great wads o yeast. Oh, and I am making 5.5 gall of 1.036.Boy... how many gallons are you making? I don't make starters for S-189. One pack is plenty for 5 gallons, no starter, no rehydration... especially at 66-68 F.
Please update as you go. I’ve ordered the Pill. Should arrive in a few days. I’m interested in your thoughts.Brewed a WC IPA today. I'm testing out the Rapt Pill fermentation monitoring device with this batch

Voiced to the family my wish to brew this weekend. Ron's 1939 Fuller's PA.
1.051/43IBU
Pale ale malt, 15% flaked maize, barely 3% invert, a touch of roasted for color. Fuggle bittering, EKG late. Trying Omega's 016 as I wasn't able to replenish my stock of Pub.
I think you should do it!Just got the grain milled for the House Strong Ale I'll be brewing tomorrow. Haven't done this one in a while, and I'm toying with the idea of adding bourbon-soaked oak cubes to the keg. Have time for that since I like to let this one sit about 2 weeks in the fermenter.
Brewing 20 gallons of beer is a way to jump back in with both feet!!!Well was last weekend. Has been a year since last brew (sad face emoji). Did a double brew day 20+ gallons. Had some hiccups from remembering my equipment but was successful and hit my SG well close enough.
Yeah was a longer day than anticipated. But worth it. Proper planning could have cut out a few hours. But I was obedient and didn't get drink through the first batch.Brewing 20 gallons of beer is a way to jump back in with both feet!!!
5 3/4 gallons in the fermenter at 1.073 I'd say we have a wee heavy.
Cheers
It's my first wee heavy and my first time brewing with golden promise so I hope it doesn't suck lolVery nice. A wee heavy is on my todo list.
