Doing my Irish Red right now. But for me it's the other end of the spectrum - 30°C and about 90% humidity.

I haven't decided whether to add a tiny bit of aroma hops (Mt Hood) or just go straight Cluster @ 60. Either way would be historically accurate from what I can tell.
I made a GP Citra SMaSH last and it turned out well.Got some leftover grains, doing a SMaSH with 12 lbs. of Golden Promise, citra hops and US-05, should turn out good, anyone have ideas on a hop schedule, I have plenty of hops for whatever
