Due to a weak (stovetop) burner, I need a boil volume of 3.5 gallons. Here is the plan:
10 pounds of grain
Mash with 3 gallons
Batch sparge with 2 gallons
Boil 3.5 gallons after 0.15 gal/lb absorption
Specifically: Can I count on that absorption even if I squeeze the grains (BIABIAC, brew in a bag in a cooler)?
I'm thinking smaller sparge volume helps keep the pH low, so no tannin problems. Does this work out in practice? Most people have sparge volume > mash volume.
