I love this beer. Yet, I have had little luck finding people who have posted recipes for a clone.
Info from Sierra Nevada website:
ABV: 4.8%
OG: 12.3 plato / 1.050
FG: 3.5 plato / 1.014
IBU: 15
Bittering hops: Perle or Sterling
Malts: 2 row pale, wheat, munich
Yeast: Ale, proprietary and they use open fermentation
According to the guidelines, it has to be at least 50% wheat and the rest Pilsner, so apparently this isn't an authentic bavarian hefeweizen.
Starting from the recipes I have been able to find, plus a little effort with BrewMate software, I have come to the following assuming 70% efficiency:
Kellerweis (Weizen/Weissbier)
Original Gravity (OG): 1.053 (°P): 13.1
Final Gravity (FG): 1.013 (°P): 3.3
Alcohol (ABV): 5.21 %
Colour (SRM): 4.8 (EBC): 9.5
Bitterness (IBU): 15.7 (Average)
5 lbs Wheat Malt 50%
4.5 lbs Pale Malt(2-row) 45%
0.5 lbs Munich Malt 5%
0.5 oz (0.1 oz/Gal) Sterling (7.5% Alpha) @ 60 Minutes (Boil)
Single step Infusion at 154°F for 60 Minutes. Boil for 60 Minutes.
Fermented at 68°F with Wyeast 3068 - Weihenstephan Weizen

Can anyone provide input? I would hope to harvest yeast from bottles of real Kellerweis instead of the Weihenstephan.
