I have about an ounce of oak chips soaked in a hopsack wet with whiskey. It's been sealed in a mason jar sitting in the pantry for a couple of years. It's not submerged at all. Just very wet.
I have a Porter ready for these chips if possible.

Use 'em.
Whiskey sits in oak barrels for many years.
Then they sell those barrels for beer.
And alcohol at those proofs are a great preservative.
