shelf life of grains? possible recipe...

Hey Ive got some roasted barley and black patent malt laying around from about 3 months ago. Ive kept it sealed in its original bags, and then in a ziplock bag. How long should these last? They were precrushed. I ordered them from Northern brewer. They each have about 3/4-1/2 a pound left of each of them.

If i was going to throw together a stout would that be too much of each to steep (too powerful)?

This is what i have left.

3/4 lb roasted barley
3/4 lb black patent
1/2 lb crystal 20l

Maybe throw in about 6-7 lbs of LME and some hops and see what happens? Thanks for any input.
 
If your doing a 5 gallon batch I would suggest cutting the Black Patent to 4-6oz. Increase the crystal to 1 lb. and add 1/2lb. chocolate malt.
