I hope to be brewing saq's Pious Westvleteren 12 in a few weeks. The recipe calls for 60 days at 50*. That's a long time to have my fermentation chamber at that temperature with nothing else going! Is there a recommended recipe that I can do during this phase? I thought about a lager, since I haven't done one before, but I don't want to tie my chamber up at a cold temperature for too long and not be able to do other brews!
