I have harvested several different yeasts from Belgians, wheat beers, and regular brews. I am looking at making five gallon batches and trying numerous yeasts in one gallon ferment vessels. I would like something:
-Simple to let the yeast flavors show, but flavorful enough to be enjoyable.
-Fairly common ingredients to use what I have on stock, and can reproduce if successful.
-Just enough hops to tell if the hops come through versus the malt flavors, but not overwhelm.
-Milder alcohol levels so as to not take so long before ready to taste test.
I will probably do a trial for each of the three yeast genera.
The regular yeasts are going to be Bells, Pacman, Notty, WL002, and Wyeast 1968 ESB strain I think.
The wheat is from North Peak, Widmers, and Flying Dog; plus a couple others.
The Belgians are Chimay, Fin du Mond, Pranqster, Flying Dog Belgian IPA,and WL 550.
