Hi all. Terrapin's recent side project release was Moonray- a dark wheat beer with chocolate and orange. It was great, and I'd love to try to brew a clone for the winter months.

Per the website:
ABV: 8.3%
IBU: 20
OG: 19.5

Malts: Malted Wheat, Munich, Dark Munich, Vienna, Chocolate
Hops: Sterling
Other: Cocoa Nibs, Orange Peel

I've never done a dark wheat before. Any ideas on percentage of the malts?

I know little but I would try:
55% munich
20% wheat
10% dark munich
5% vienna
10% chocolate
 
Interesting. I had almost the same numbers, but the wheat and Munich were reversed.

I assumed that the malts were listed biggest percentage to smallest, but have nothing to back up that assumption.
