Recipe for Dunlop cheese?

Does anyone here have a simple recipe for a Scottish cheese called Dunlop Cheese? I have a couple of recipes but the difference in these two are so great that I am not convinced that either is reliable. I think - but am not certain - that Dunlop is a bastardized version of Cheddar and the cheddaring is somewhat loosey goosey. I also think that the key element is that the cheese is quickly cooked after pressing presumably to stop any further acidification of the curds. But apart from this ...
