It forms a very easily disturbed layer of tiny floaters in the bottles - am I using too much or too little ?

I'd never heard of them, Bob - when I googled it, what I read is that you add it to the boil, so I would think they would settle out completely during fermentation. Is that how you're using them?

yes - added to boil for last 15 minutes
