Pine / Resin Pale Ale - Too much on the dry hops?

Howdy, gang. I'm experimenting with a recipe for a pine-y / resin-y Pale Ale, like a turned-down Sixpoint Resin. I've got the following put together, but I'm wondering if I'll end up with the equivalent of a pine cone jammed into my mouth.

Is there anything that I can change which would get me a reasonably balance pale ale without feeling like I'm getting orally violated by a christmas tree?

Chinook is probably the best for that "pine cone" effect. 2 oz dryhops isn't very much, actually.

I usually dryhop with 3oz for Pale Ales, 4oz for IPA's, and 5-6oz for 2xIPA's.

My Simcoe hops are kinda old and have been in the fridge for a bit. I was going to dump them into this, for the hell of it -- if I crack the package open and they don't smell like moldy foot-cheese, I'm guessing I'll be good?

Lastly, all the reading I've done indicates that Simcoe can get kind of cat-pissy, but only when used as a bittering hope. Can anyone else weigh in?
