Have a busy day tomorrow, but want to squeeze in a brew day. Doing first ever hefeweizen. Not afraid to do an overnight mash (~7 hours) for a standard ale, but worried with a wheat beer, just because I don't know what I don't know. Afraid maybe it will end up too low FG, too thin.

Can I do it? Would like to get a head start tonight, dough in, then lauter and boil first thing tomorrow, if I can. But if not, maybe I'll just get up early, and set up tonight.

Sure you can overnight mash. If your concerned with a low FG, some claim increasing mash temp 3-4 degrees will help counter the effects of the long mash.....
