I just qualified for MCAB and entries are do January 18. I don't have time to rebrew my winning IPA, so is there a good way to slow it's aging? Refrigeration?

Cold storage in the dark. You might have some hops loss as hops tend to mellow with age. If it's a strong IBU IPA with say, some assertive fresh alpha acid hops during the boil and a decent amount of dry hopping in the primary after the krausen has fallen, it should be fine.
