I'm a little confused why some setups have a pot for steeping grains, then move that to another pot for starting wort.

The first pot has a false bottom because they dump the grains directly in? vs using a muslin bag?

I guess since i'm watching most noob setups, they do all of the above in one pot.
 
Using one kettle to steep or mash in would allow straining of the wort into the BK. I just do partial boil partial mash biab in the same kettle with a cake cooling rack in the bottom to keep the grain bag from burning/melting on the bottom of the kettle.
 
I wanted to go partial mash as cheaply as I could & still get good results. 5G paint strainer bag & a cake cooling rack were it. I wrap the BK/MT in my insulated winter hunting coat for the 1 hour mash. Maintains temps very well.
