Okay. So, a pale base malt. My suggestion to show off the malt... I'd make a SMaSH beer with a simple, not overpowering hop, like Cascade, or maybe even Willamette. Hop at pale ale (not IPA) levels. And use a clean yeast strain, like one of the Chico strains. The more complex you get, the more the base malt's character will get lost.
