Low alcohol, big taste challenge

OK so I'm looking to brew a really low alcohol beer under 2%abv. I am thinking that a mild would be the best option. Here's the recipe so far:

50% Maris Otter
25% Dark Crystal
12.5% Chocolate
12.5% Oats

5.5IBU Styrian Golding @ 60min
4.0IBU Styrian Golding @ 10min

Windsor Ale Yeast

OG: 1.018
FG: 1.004 (I would expect this to be a bit higher)
ABV: 1.8%


Does anyone have any tips on how to brew this beer to have the body and flavour of a normal strength beer? Caramelisation of the wort might help, mashing high will obviously be important, any other ideas? I will be kegging this beer btw.

I don't think it'll get to 1.004 with that grainbill, so I'd actually up the OG to about 1.035 and mash high and it would finish at 1.018 or so. Windsor yeast is perfect.
