Tape something over the temperature probe to insulate it from the ambient air. You want it to read the temperature of the wort as accurately as possible.

What would you say are the down sides of the fast ferment system?
Are you able to remove all the cake for a clean secondary?I haven't really found one . Maybe a slightly bigger opening of the collection ball
