Just wondering, it seems we use ale or wine yeast to make cider on here, but just curious if anyone has tried fermenting cider with a lager yeast, presumably using lagering methods?

How would this change the taste, and what, if any benefits might it have?
 
hmm- will it ferment? yup... will it change the taste? prolly. Pick up some s-23 a gallon carboy and a gallon of apple juice and report back... hell i just may do this now
 
Yes. It came out smooth (at 10%). Can't help with flavor though--I made it as a graff (with Belgian tripel grain bill).

From what I understand, ciders tend to keep more apple flavour when fermented slow. Also, do a forum search for this--there's at least a few threads.
