Kat Piss - DoubleIPA

I just brewed this DIPA today (finished just in the nick of time to make it to work on time) !!

I will be posting updates as I go, but for now I was anxious to get this recipe up on the forums for some reviews !! I am new to brewing and this is also my first stab at a DIPA!
(Any and all comments are welcome)


Kat Piss - DoubleIPA

1# Caramel/Crystal Malt (cracked)
steeped @ 165'f for 25 minutes

While bringing my water to a boil:
Added
0.5oz Simcoe
stir well*

8# L.DME

60 minute:
1oz Warrior
1oz Chinook

45 minute:
1oz Citra
0.5oz Simcoe

30 minute:
1oz Centannial
1 # L.DME

10 minute:
1oz Willamette
0.5oz Centennial
1 Tsp Irish Moss

Day 10:
Rack to secondary:
Dry Hop:
0.5oz Centennial
1oz Willamette
1oz Cascade

I think it's got WAY too many bittering/early hops and is very lacking in late hops. I like to hop more like this:

1 oz bittering hops (60 minutes), up to 35-40 IBUs with this addition for a 1.070 beer

1 oz flavor hops 15 minutes
1 oz flavor hops 10 minutes
1 oz flavor hops 5 minutes
1 oz flavor/aroma hops 0 minutes or whirlpool hops

Dryhop 5 days with 2-3 ounces of the same hops used from 15-0 minutes.

I'd do a full boil if at all possible, but if not I'd boil as much as I possibly could fit in the pot. I'd add 1/2 of the extract at flame out.

The Yeast I am using is a pack that I had laying around !
I forgot to get some while I was out, and figured id use it and get more later!

Do you think the:
SAFALE US-05 DRY ALE YEAST
will suffice ?

used for convenience not by choice ... im a bit worried about it !

Yes, that would be my yeast of choice, actually, so that's fine!

Just a small update ~

this thing is ROARING in the primary!!!!
I have never seen any bubble activity from start till now (strange)
However, the yeast is just swirling around in there like maniacs !!!
Also has a heady amount of krauzen, which is seemingly falling back now!

I am almost positive that the 10 day secondary schedule I orginally planned for will not be met!

Im thinking more like 14-21days before I can rack to secondary!
(and dry hop as planned)

It is just going way to crazy at the moment to even think about a secondary!!

this is my 1st DIPA and I am unaware of what to expect....
if anyone has a little more experience with Imperials please speak up... I am all ears !
