I enjoy brewing weird or not so common brews. I have a few questions about using cinnamon, oak chips and vanilla beans. I want each flavor to be fairly balanced. I am going to brew up five gallons.
1. The cinnamon, I've read using ground cinnamon at flame out or at 10 min or using sticks in the same fashion or in the secondary for a few days. I hope someone can shed some light on the best method for bringing out the flavor. Also how much to use for the 5 gal?
2. Oak chips from what I gathered is soak in vodka or whiskey for a few days and rack the beer on top in the secondary.
3. Vanilla beans, cut or no cut and how much for five gallons to give a pronounced flavor?
