I am thinking about making an American Wheat that is double strength for baseball Opening Day.

12lb Wheat LME
2lb corn sugar
May add some light crystal malts. Not much, want to keep it light colored.

There are 2 hop schedules I am contemplating. Both very rough. I am looking for hoppy but not very bitter.

1oz Warrior 13.7% 60m
1oz Amarillo 9.2% 15m
1oz Amarillo 9.2% 10m
2oz Amarillo 9.2% 5m
3oz Amarillo 9.2% dryhop

2oz Amarillo 9.2% 20m
2oz Amarillo 9.2% 10m
2oz Amarillo 9.2% 5m
1oz Amarillo 9.2% flameout
let sit 45minutes before starting cooling.
 
The hop bursting technique (the second one, where you are getting your bitterness from late additions) will give you less bitterness, more flavor and aroma.
