Well I tried one of my NEIPA early 1 week after I bottled. Great taste. Little bit of carbonation. No head on top. Will that extra week make a difference?

It depends on many things. Many of my beers have pleasent carbonation 5 days after bottling and fully carbonated at 8-9-10 days. It takes more than that when the ABV is higher than 8% and the beer is kept under 68F. Many beers will need more days in the bottle to develop into the beer you are expecting ... or not.

But being a NEIPA, I strongly recommend drinking it young and fresh. It might turn into a brown, oxidized mess sooner than you expect.

Yeah it is an 8% beer and I am around 68 to 70 degrees so I will try not to think about it. And as far as shelf life, everyone is wanting to try it. So I don't think I have to worry about that. LOL

Give it at least 12 days and then pop another one. Carbonation depends on proper priming sugar amounts & suspended yeast in the bottle. But yes drink it fresh!

Don't drink them all right away. I would expect they will get even better. I have always bottle conditioned for 2 weeks before trying one. Some are carbonated and some are not ready. But ALL of my beers have tasted better at 3 weeks bottle conditioning or longer for dark and high ABV beers.

I haven't brewed a NEIPA so I can't say on that style. So far I have tried a few commercial ones and have yet to try one I like.
