I am familiar with the concept of targeting specific water profiles using additives. However, I see that there are water profiles for certain European cities/areas and I have no idea how to relate these to what I am actually brewing. How do I know what profile to use for what I am brewing?

Lastly, my next batch is going to be a IIPA, a clone of Double Jack from Firestone Walker. This will be the first batch that I attempt to target a water profile and a mash pH. For this beer, what is a good profile to target?

You would have to work out the math yourself but I know that Firestone uses a neutral water and adds gypsum and CaCl to reach 100ppm for it's hoppy beers.
