Hello!
I just had first malt smoking session yesterday. I sprayed the malt with distilled water a few times during the smoke to give the smoke something to stick to, then dried the malt in a 200° oven for an hour, stirring every 15 minutes to ensure evenness.

Many of the DIY smoking threads say to allow the malt to mellow for 2-3 weeks before using.

Are the oven drying and the mellowing time both necessary, or is it more of an either/or thing?

Thanks!

I wish i had an answer to give you but i've not tried smoking any of my own malt yet.
Good luck.

You did every thing right just use it the longer you let it sit the more flavor you lose. The time in the oven is necessary as it drives off the acetic acid from the smoke.
