Grain Bill
4# American 2 Row

Malt

5# X-Light DME

Adjunct
1# Corn Sugar

Hops – MTz Blend 5oz (2 oz Zythos + 3 oz Citra)
.5oz MTz Blend – 60 min Boil
.5oz Mtz Blend – 30 min Boil
2oz MTz Blend – Hop Tea #1 - 15 min Whirlpool 160°
1oz MTz Blend – Hop Tea #2 - 10 Primary Ferm
1oz MTz Blend – Hop Tea #3 - 3 days prior to bottling

Yeast
1 White Labs WLP715

Yeast Starter – 3 days
1# X-Light DME
1 tsp. Yeast nutrients
3 qts. water

Water
10 gallons RO
2 tsp. Gypsum (1tsp/5gal)
2 tsp. Calcium Chloride (1tsp/5gal)

Mash
1.5 gals 145°-155° (Steep)
1 tsp Amylase Enzyme - at mash 145°-155°
1.5 gals 160° - (Sparge)

Additions
1 tab Whirlfloc - 15 mins
1 tsp Yeast Nutrient – 10 Days Primary Fermentation
1 tsp Amylase Enzyme – At Mash 145°-155°


Hop Tea
#1 - 2 oz Hop Blend, 1 qt 160° water
#2 - 1 oz Hop blend, 1 qt 72° water
#3 - 1 oz Hop blend, 1 qt 72° water

Process
In brew kettle, 4# Grain steeped in 1.5 gal. water from 145° to 155° (5-10 min)
At 155° flame off, add Amylase enzyme, grain rest for 15-20 min.
Turn on flame, start boil
Raise grain out of water in brew kettle and sparge with 1.5 gal. 160° water
Add 3 gal. water to brew kettle
At boil (212°) Start timer 60 min.
60 min. add .5 oz. hop blend
30 min. add .5 oz. hop blend
15 min. add 5# DME, 1# corn sugar and Whirlfloc tab
15 min. drop in chiller coil (sterilize)
0 min. flame out , pull hop bags, swirl, cool for 15 min.
Transfer wort to chill pot (drop in sterilized chiller coil)
Turn on chiller (Garden hose), drop temp to 160°
At 160° Turn off chiller, add Hop tea #1, Whirlpool for 15 min.
Drop chill pot in ice bath, turn on chiller, drop temp to 70°
Add Yeast starter to fermenter
Transfer wort from chill pot to fermenter
Add Yeast nutrient and Hop tea #2, Swirl, seal fermenter
Ferment for 10 days
Add Hop tea #3, seal fermenter
Ferment for 3 days (or until fermentation has stopped)
Bottle Beer!
