I have been wanting to brew a Dark Saison but I am not sure what grains I should use to get the dark color I'm looking for. I was actually hoping I could take my existing saison recipe and tweak it into a dark saison with the help of my fellow hombrewtalkers. Here is the recipe for my saison, please help.

7 lbs Belgian Pilsner
2 lbs White Wheat Malt
1.5 lbs Vienna Malt
0.5 lb Turbinado Sugar

1 oz EKG @ 60 mins
0.75 oz Styrian Goldings @ 15 mins
0.25 oz Saaz @ 15 mins
0.25 oz Styrian Goldings @ 2 mins
0.75 oz Saaz @ 2 mins

Single Infusion mash @ 150 for 60 mins
90 min boil

Wyeast 3522 - Belgian Ardennes

Ferment for 30 Days starting in low 70s then slowing raising temps to around 80-85

You could try to make your own or buy dark candi sugar instead of using the turbinado sugar. You could also try a debittered black malt.

Just replace some of your wheat wih Briess Midnight Wheat. Supposed to be even smoother than Debittered Black, which would work better for a Saison.

Thanks for the help I think I'm going to try the midnight wheat. I just have to have my LHBS order it for me since they do not carry it.
